Lynae Fearing
Lynae Fearing is a Dallas-born restaurateur whose career reflects a deep-rooted commitment to the city’s hospitality scene. A native of Dallas and lifelong student of its evolving culinary landscape, Fearing’s work is shaped by a nuanced understanding of the neighborhoods, diners, and restaurateurs that define the city.
Her approach—Trademark Native Dallas Hospitality—blends local connection, culinary exploration, and personal accessibility in a way that few in the industry consistently achieve.
Fearing’s hospitality journey began at the original Primos on McKinney Avenue, a landmark gathering place for Dallas’ early hospitality insiders. Since then, she’s remained hands-on in every sense—ever present in her restaurants, engaging with guests, mentoring staff, and ensuring every detail of the guest experience feels personal and intentional.
Her restaurant concepts reflect both neighborhood familiarity and global influence. Shinsei showcases modern Asian cuisine in a relaxed yet elevated setting. An immediate success, Shinsei received rave reviews and multiple accolades, including D Magazine’s “50 Best Restaurants” and the Readers’ Choice award for Best Sushi. Shinsei currently ranks among OpenTable’s 100 Best Restaurants in America.
Lovers Seafood & Market pulls in flavors and ethos of the Eastern Seaboard—drawing inspiration from the Hamptons, Nantucket, and Cape Cod. Lovers most recently received a nod as Best Seafood Restaurant from the Dallas Observer for its fresh, sustainable seafood and coastal charm.
Perch Bistro & Bar, her newest venture—named for its home in Dallas’ Bird Streets—features a menu that is both approachable and elevated, with beloved Italian, French, and American dishes, wines, and cocktails. It is gaining momentum as the social home of the Inwood-Lovers Lane neighborhood. Culture Map Dallas recently awarded Perch Executive Chef Roman Murphy “Rising Star Chef of the Year.”
An essential aspect of Fearing’s work is the integration of wine and cocktails into the core of the hospitality experience—not as afterthoughts or pairings, but as meaningful, expressive components of the menu. She regularly collaborates with sommeliers and beverage experts, designing drinks that reflect culinary intent. One recent example: her new Mignonette Martini at Lovers Seafood—a savory, ginger-laced cocktail built directly from the restaurant’s signature oyster accompaniment.
Fearing travels frequently to explore culinary innovations and traditions, bringing fresh ideas home to Dallas.
That spirit of continuous evolution, combined with her boots-on-the-ground presence, makes her restaurants feel less like operations and more like extensions of the neighborhoods they serve.
She is proud to be part of a growing community of women leaders in Dallas hospitality. As Fearing puts it: “In many ways, I consider myself a reflection of Dallas. Born and reared here, the charming character of this city is in both my DNA and upbringing. I’m especially proud to have found strong friendship with other Dallas female hospitality leaders — Dee Lincoln, Holly Forsythe.”

Executive Chef

Roman Murphy
Chef Murphy comes from Austin, TX where he was a chef for 10 years and worked at some of the city’s best restaurants such as Congress, 2nd Bar + Kitchen, Peche, and Jeffrey’s. In 2015 he was named one of Zagat Austin’s 30 Under 30: Rockstars Redefining the Industry while at the helm of Sandra Bullock’s Bess Bistro.
As a recent transplant to Dallas, he will focus on premium steaks, pastas made in-house, and coastal Italian/Mediterranean cuisine.
Chef Murphy has over 5 years of experience making fresh pasta and pizzas as the former Executive Chef of North Italia in both of its Austin locations, and he is excited to share this experience with the staff and clients at Perch Bistro and Bar.
He continues to share his passion for food through his creations and challenges those around him to expand their palettes.

Sushi Chef

Shuji Sugawara
Our “King of Wok” – “Elvis” – is fast becoming one of Dallas’ hottest sushi chefs, if not already a cult icon.
Shuji Sugawara moved to the U.S. to study English and began working in Plano’s authentic Japanese restaurant Nakamoto.
After three years of study under Mr. Soda Takashi, now owner of Sushisake in Richardson, Shuji moved on to work at Anzu on McKinney Ave. The only sushi Chef at the Pacific-rim Cuisine establishment, he further mastered his art.
Four years later found his new opportunity at Tei-Tei Robata Bar on Henderson. His last stint at Teppo progressed him further toward the cult status he now enjoys.
If he’s not practicing his art, he’ll be riding his motorcycle or keeping up with Buick and Stanley, his two Siberian Huskies.
